Emeril's Bistro at Sea

Could we really build our newest ships to reach their true flavour potential without Emeril restaurants? It would be tough. So we went to the man himself and he was like Sure Carnival, kick "em up a notch" and that was pretty much that!
Emeril's three restaurants at sea - Emeril's Bistro 1396 (the original, on Mardi Gras), Emeril's Bistro 1397 (the worldly one, on Carnival Celebration) and Emeril's Bistro 717 (the seafood specialist, on Carnival Jubilee) - make sure that everybody knows about Emeril's love for Creole cuisine.
That's essentially his life's work, and now you will enjoy the authentic bayou flavors and fun that New Orleans is known for on your vacation. If you haven't had the pleasure, we are talking about fried oysters, BBQ shrimp, duck & sausage gumbo, po-boys, muffuletta sandwiches, fresh ceviche, jambalaya and more.
And at Emeril's Bistro 1397, the restaurant's one cool trick is also collecting flavour inspiration from every corner of the world, and spotlighting international dishes daily that make great use of them for you... all with Emeril's signature culinary flair!
They're serving up the man's faves all day... and because flavours this big don't just sleep in, we do it for breakfast too with choices like shrimp and grits, breakfast po-boys and bananas foster crepes! Raw bar, incredible desserts and Crescent City atmosphere round out the experience.

Chibang

"Chibang" is a fun word to say, so take a minute to try it out. (Really, do it now - they'll wait!) That sounded great to us, and Carnival can't wait to host you at they're new restaurant. When you join them you will detect some delicious Chinese and Mexican traditions in the atmosphere of this elegant, modern spot - but even more importantly, you'll notice them on your plate!
They have brought together favourite dishes from the two cuisines, into an amazing menu that invites you to spread your culinary wings across the Pacific. Try a little from each side by mixing, matching and sharing in an evening of flavour explorations - right down to handcrafted cocktails made with authentic ingredients.
Or stop in to Chibang! for a casual lunch that features noodle and burrito bowls based on our favourite ingredients from both of these worlds.

Rudi's Seagrill

The sea is all around you when you cruise, and it has something for all your senses to experience. From the scent of a sea breeze to the sound of waves lapping at the ship... complete the experience with an evening of curated seafood flavours at Rudi's Seagrill.
This restaurant is the brainchild of cookbook author and master chef Rudi Sodamin. He has years of experience pleasing palates of vacationers.. and this guy loves serving up a smile as much as Carnival does! But he's serious about you experiencing the best that the seas have to offer, and an evening at Rudi's proves it through the courses.
Enjoy selections like seafood bisque and crab-stuffed lobster tail imperial - all served with an elegant flair that pays proper tribute to the beauty of the ocean from which so much fun, and flavour, arises.

Bolt: Ultimate Sea coaster

Plenty of folks come to a Carnival cruise ready to chill, but if it's a thrill you are seeking, this is also the vacation for you. Meet BOLT: the fastest - and first! - rollercoaster at sea. Strap in and zoom your motorcycle-style speed machine around an open-air course high, high above sea level. You know how on most rollercoasters... actually, never mind. Forget other coasters because this all-electric thrill ride puts you in the driver's seat.
That means you actually get to control how fast you go, so hit the gas and try for the fastest time, go for the biggest thrill - plus some amazing 360 degrees ocean views! That's why we call this the Ultimate Sea Coaster. And for the folks who choose to chill: go light on the pedal, and this just might be the coaster for you!

The Golden Mermaid

To find uncharted flavors, never before seen on land, we had to dive deep. Far below the waves we met a mermaid. This one swims the depths of the oceans to find the glittering, long-lost treasures of ancient civilizations. Oh, and it wasn't just any mermaid. This mermaid was golden. You have gotta trust us... or you can join us at The Golden Mermaid, where tasting is believing, and the amazing drinks are just the beginning of the magic.
Some of the mixological treasures we are recovered from the deep? Cocktail recipes inspired by precious metals and gemstones, drinks served in exquisite glassware, plus garnishes like edible glitter to remind you of sunlight streaming through the waves from up above! All this glitz pairs perfectly with live music, making this the perfect place to relax with an elegant drink before or after dinner.

Dr Inks Phd

In life, there are important, difficult questions to answer. An example: can an octopus enjoy a cocktail underwater? Don't ask how it works, but the answer is yes. We know this thanks to the extensive research of Dr.Inks, Ph.D., the cleverest of sea creatures. She spends her time beneath the waves pondering the big ones while still finding time to sip. And here the drinks aren't just tasty, but truly unique, with color-changing cocktails, layered shots, jellyfish cocktails and more drinks featuring garnishes like boba pearls and seafoam.
At the bar you won't just enjoy some of her favorite drinks - they are as visually striking as they are tasty - but go ahead and look through some of her books, journals and fountain pens. But there's live musical entertainment nearby, right on the stage, because even octopuses needs to let their hair down.

The Ropes Course

The chance to complete an awesome challenge, high above it all! now that's what you want in a good ropes course. An awesome ropes course, however, will let you do all that with a cool sea breeze and a view to match! Not sure that navigating a high-up-there challenge is for you? Did we mention that on this one you'll be safely strapped in, emboldening you to take on the kinds of challenges you may not normally feel up to?

Here everyone - even kids - become thrill-seekers, testing their ability to make their way around the course, which features two levels of challenge, letting you increase or decrease the toughness as you go. So take to the sky!

Camp Ocean

The little ones can enjoy the best parts of summer camp, year-round aboard their Carnival cruise. At Camp Ocean kids will have a blast in supervised, age-based groups and give each a cool marine-life label: Penguins (2 to 5 years), Stingrays (6 to 8 years) and Sharks (9 to 11 years). Together with their group they will enjoy tons of fun-filled, age-appropriate activities like arts and crafts, songs, games, toys, dancing, movies and video games. When comes to mealtime, kids eat together and get their own menus with back-on-land favs like mac & cheese, chicken nuggets and more. The whole time, Carnival's experienced counsellors will be there to make sure everyone in these small groups has an amazing time. Plus, when the sun goes down it's time for Night Owls (fees apply to use this service), but kids get to stay up late having fun while their parents also enjoy themselves well into the night.

Suess at Sea:From the whimsical and always wonderful world of Dr. Seuss comes Cats in Hats, Fish Red and Blue, and both kinds of Things - 1 and 2. And they are all coming to a Carnival cruise near you as the world of Dr. Seuss leaps off the page and onto Seuss at Sea. Dr. Seuss's timeless stories are the kind kids memorize, and this is the kind of cruise you will remember for a lifetime. The whole family will still enjoy all the classic Carnival activities, but the littlest ones, and their families, will also enjoy an all-new, extra-special experience as the fantastical world of Dr. Seuss comes to life around them.
